cherry clafouti
Another recommendation from head Conran chef Ian Wood is Cherry Clafouti (Cherry Pie) - serves 4
Preparation: 20 mins
Cooking time: 30 mins
Ingredients:
- 300g cherries washed, halved and stoned
- 50g castor sugar
- 250ml milk
- 1 vanilla pod split
- 2 eggs
- 1 egg yolk
- 50g plain flour
Method:
1. In a saucepan heat the milk and vanilla pod, bring to the boil
2. In a large bowl whisk together the sugar, eggs and yolk add the flour and beat until smooth.
3. Gradually add the hot milk, stirring all the time.
4. Separate and lay the cherries in to 4 oven proof dishes.
5. Pour over the clafoutis mixture (you may need a bit more sugar to sprinkle over the cherries depending on how sweet they are).
6. Bake in the oven for about 20- 30 minutes at about 120-140°c serve warm.
